MODULE BREAKDOWN

 

MODULE 1: Savoury Formula
There is a consistent set of steps when you cook a dish in one pot or with a liquid (e.g. soups, casseroles, stews, risotto, pie fillings, pasta sauces…), and I’ve organised these into a repeatable formula. By learning this formula, you’ll be able to cook without referring to a recipe, edit recipes by substituting ingredients, and create meals with whatever produce you have on hand.

MODULE 2: Art of Sauce
Packaged sauces are full of sugar, cheap salt, and additives. If you want a quick way to improve your health, learn how to make your own sauces. I explain how four of the five mother sauces of classical French cuisine are based on one concept, how you can apply this concept in various ways, and how to do so using visual cues. I then show you how to apply this concept in the Savoury Formula. 

MODULE 3: Flavour
If you want to cook without recipes, you need to understand how taste and flavour work. It’s a simple science, but once you learn it, you’ll be able to produce delicious meals ad hoc. This module also includes my Flavour Planner — a reference guide for which flavours to use with different dishes — plus my interpretation of each spice, and my formulas for creating salad dressings and pesto using whatever you have on hand.

MODULE 4: Perfect Proteins
In this module, I explain how to choose the best cooking method for whatever cut of meat you have — allowing you to buy lesser-known cuts that are often discounted in price. You’ll also get my meat cooking times and temperatures reference guide, so you can easily adjust for the weight of the meat you’re cooking.

MODULE 5: Eggs and Snacks
My kitchen sink quiche and frittata mix plus pancakes (the MVP of my kitchen). I use this simple ratio and visual cues multiple times a week because it's a fantastic way to use up whatever you have in the fridge.

MODULE 6: Snacks
If you’re a mama like me life is basically ongoing snack provision. This module will be a growing library and includes my tips for nailing popcorn and my bliss ball template.

MODULE 7: Baking
I’m probably a better baker than a cook — I honestly don’t think I’ve ever made a bad cake! In this module, I share all my secrets. You’ll learn how ingredients work together, how to improve your baking with this knowledge, and how I edit recipes based on what I have on hand. I’ll also show you my templates for baking savoury and sweet muffins and loaves without a recipe.

MODULE 8: Getting Organised
Learn how to swap ingredients, set up your pantry, and streamline your groceries using my planner and meal inspo cheat sheet (organised by hero ingredient and how much time you have to cook). 

MODULE 9: Sourdough Bread
I’ve massively simplified my sourdough process over the past five years, and I’ll share my whole method in a story highlight on my Instagram.
