I've been there too...

Hi, I'm Emily...

 

Mama to two busy little boys, one dog, ten chickens and a sourdough starter.

I love food and worked in the food industry for over 15 years. I cook multiple times a day and have done for as long as I can remember. Over the years I have learnt that I feel my best when I eat whole, real foods not preservatives, additives or fake ingredients, fake foods, and I've worked in the game long enough to be able to tell the difference - but each year the marketing of fake foods gets better and better. 

Plus - we know the way we farm and grow our food is completely unsustainable. From intensive use of glyphosate to the factory farming of meat to microplastics in our bloodstream to global food miles, I could go on and on. Is anyone else starting to feel concerned for the world we are leaving to our children?

So I made a commitment to my family:

I will cook the vast majority of our meals FROM SCRATCH using actual real food ingredients and whenever we can afford it I use locally sourced, organic or regeneratively farmed ingredients.

Basically if my Grandma didn't eat then my family won't either.

But here's the thing - maintaining this commitment in my kitchen EVERY. SINGLE. DAY. whilst also minimising waste, keeping our food budget down, being present with my kids, staying on top of the housework AND my self care...
was overwhelming. 

 

And that’s when it clicked… I didn’t need more recipes.
I needed better systems.

 

Systems that allow me to cook intuitively, swap ingredients, pull together a nourishing meal from what I have on hand, figure out dinner on the run, pivot around my kids requests and then cram in some extra veggies when I can.

MODULE ONE

Savoury Formula & Sauce

 

Learn the backbone of home cooking: the simple one-pot formula that unlocks pasta sauces, soups, stews, casseroles and risotto — all without needing a recipe. You’ll discover the exact order of steps, the visual cues to watch for (like how browned onions should look, how thick a sauce should be, and how to know when liquid has reduced), and how to confidently adjust dishes based on whatever ingredients you have. You’ll also learn how four of the five classical “mother sauces” all share one simple concept, so you can create endless variations, fix common mistakes, and pair sauces with your savoury dishes effortlessly. Creating Flavour

 

 

Understand flavour in a way that finally clicks. You’ll learn how ingredients fall into three roles — base, flavour, or structure — and how to combine them intuitively. We’ll explore the six elements of flavour, how sweet, salty, sour, fat and umami work together, and how tiny adjustments transform a dish. You’ll also get a practical “Flavour Toolkit” of everyday ingredients that fix 90% of flavour problems, plus a printable Flavour Planner with family-friendly flavour profiles, ingredient pairings, and quick-start combinations. After this module, you’ll know exactly what to add when something tastes flat, bland, too sharp, or “just not right.”

Master eggs — the simplest, most versatile protein. You’ll learn the ratios and visual cues that let you make frittatas, quiches, pancakes and baked egg dishes without ever referring to a recipe. Then we move into proteins more broadly, with a simple framework for choosing the right method (fast/hot vs slow/low) for any cut of meat. You’ll learn what to look for before cooking, how to handle unusual cuts with confidence, and how to avoid common mistakes like toughness, dryness or uneven cooking. Includes quick guides for pantry proteins, freezer staples and effortless protein add-ins for busy nights.

MODULE FOUR

Baking Essentials

 

 

Discover the secret to baking from scratch without recipes: the equal-parts sponge ratio and the universal muffin template. You’ll learn how to adapt cakes, muffins and simple desserts based on what you already have, plus visual cues for doneness, texture, crumb and consistency. This module also includes my go-to all-purpose pastry (perfect for quiches, pies and galettes) and the key techniques that make pastry easier and more forgiving. Baking is less flexible than cooking, so I give you the clear signs, fixes and adjustments to help you troubleshoot density, dryness, wet batter, rising issues and underbaking with confidence.
